The best salads are the ones without salad in them.
This year, well January, I can’t promise any more than that, I’m going to try to eat a bit better. We are all doing it, it’s January…it’s the rules.
I saw a Beetroot and Smoked Mackerel recipe in the January Jamie Oliver mag and thought it looked nice… ‘course I’m not organised enough to have all the ingredients so this is my version: finely chopped raw red onion, beetroot and Smoked Mackerel, mixed together with a little olive oil, white wine vinegar and a bit of paprika. It was a bit sharp when I had a few cheeky mouthfuls last night but this morning (11am isn’t too early for lunch) the mackerel had soaked up all the juices and calmed the onion down. It was a soggy, healthy mess of a bright red lunch and it was fun and really tasty.
Tip: It might be best to have some chewing gum for after, if you want to keep your colleagues happy :)
